This Perfect Plum Cake is a timeless classic, known for its rich flavor, moist texture, and warm spices. Whether you’re baking it for Christmas, a festive celebration, or just a cozy afternoon treat, this recipe guarantees a delicious result. Made with fresh or dried plums, nuts, and a touch of brandy, it's a cake that only gets better with time.

Ingredients
  • 1/2 cup butter
  • 3/4 cup powdered sugar
  • 2 eggs
  • 1.25 cup all-purpose flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon lemon juice
  • plums (for toping)
  • brown sugar (for sprinkle)
  • cinnamon powder (for sprinkle)
Instructions
  1. Prepare the Wet Mixture:

In a mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition.

  2. Combine the Dry Ingredients

In a same bowl, whisk together all-purpose flour, baking powder, salt, vanilla essence, and lemon juice. Beat it

  3. Add Plums:

Pour the batter into the prepared pan and smooth the top. Arrange plum halves, cut side up, over the batter. Lightly press them in, then sprinkle brown sugar and cinnamon powder.

  4. Preheat the Oven:

Preheat your oven to 180°C for 10 mins.

  5. Bake:

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool the Cake:

Let the cake cool in the pan for 15 minutes.

  7. Serve:

Serve warm or at room temperature. Goes great with whipped cream or vanilla ice cream!
