Mutton Hareesa Recipe
Mutton Hareesa is a luxurious and comforting stew, traditionally made with tender mutton (goat or lamb), slow-cooked with wheat and a blend of spices. Prepare the Wheat
Soak the wheat grains in water for overnight. This helps to soften the grains, making them easier to cook.
boil wheat with 1 tablespoon salt in pressure cooker until the wheat is properly boiled.
After boil, grind the wheat in grinder and make paste

Mutton Stoke Preparation
In Pressure cooker, Add mutton with 1 tablespoon salt, black cardamom, green cardamom, cloves, cinnamon bark and cumin seeds. Mutton in pressure cooker almost cook 20 minutes.
Once the Mutton is fully cooked and tender, separate Mutton Stock and Mutton. Shred the Mutton pieces and remove all bones.

In a large pot, heat 2 tablespoons of oil or butter over medium heat. Add the shredded Mutton and fry 1 minute, now add black pepper, Mutton stoke, and grind wheat paste. Cook for another 20-25minutes to allow the spices to bloom and good texture.

Serve
Ladle the Mutton Hareesa into bowls, garnishing with Lemon slices. Serve hot with extra ghee on the side for drizzling.
