Malai Kulfi is a popular frozen dessert made with thickened milk, sugar, and flavored with cardamom, and nuts. Creamy and dense, it's a delightful summer treat with a luscious texture and rich taste. Unlike ice cream, kulfi is not churned, making it denser and more indulgent.

  1. Grind the nuts:

    Add pistachio, cashew and almonds in grinder and grind it well.

  1. Boil and Thicken the Milk:

    In a heavy-bottomed pan, bring the milk to a boil. Add green cardamom. Reduce the heat to low and simmer while stirring frequently or until thickened. This will take about 30 minutes. Now remove green cardamom. Stir in ground nuts and keep stirring. 

  1. Prepare The Flavor:

    Add sugar to a separate pan and cook it until golden. Now add melted sugar to thickened milk. Keep stirring.

    When liquid remain 1/2 liter turn off flame.

  1. Fill Molds and Freeze:

    Pour the cooled mixture into kulfi molds or small cups. Cover with foil or lids. Insert ice cream sticks if desired. Place in the freezer for 6–8 hours or until fully set.

  1. Unmold and Serve:

    Dip the molds in warm water for a few seconds to loosen. Unmold and serve immediately
